Gupta & Jomi – It Looks like our Belgian “boulettes” but it’s Georgian

Ingredients for the tomato sauce:

  • 10 tomatoes
  • 3 onions
  • 7 garlic cloves
  • 1 bunch of parsley
  • 1 tbsp of coriander powder
  • 1 tbsp of blue fenugreek
  • Salt

Preparation of tomato sauce :

In a saucepan, sear the onions with sunflower oil and add the tomatoes and spices. Add herbs, garlic and salt at the end of the cooking process.

 

Ingredients for the “gupta” :

  • 500 g minced beef meat
  • 1 chopped bunch of coriander
  • 1 chopped bunch of parsley
  • 2 small onions
  • 3 garlic cloves
  • 1 carrot
  • 1 tbs of a spices mix : coriander powder + blue fenugrec powder
  • 2 eggs
  • 200 g boiled rice

Preparation of the “gupta” :

Mix together the meat, coriander, parsley (keep a few leaves for the water), onions, garlic, carrot, spices, eggs, rice, salt and black pepper. Make a few balls with the mixand boil them in water together with chopped onions and fresh parsley.

After the boiling process, fry the meat balls with sunflower oil. Put the tomato sauce on a sauce pan and make it boil. Serv the meat balls together with the sauce, a few parsley and/or coriander leaves for decoration and Jomi (boiled rice mixed with corn flour and dried on fire for around 15 minutes. The rice dough is molded with a spatula soaked in water in a small galette shape.
