A super easy recipe for delicious homemade ginger candies…
I stole this recipe on a Belgian blog I love for its surprising and worldwide recipes : “un peu gay dans les coings” (in french only). This preserved ginger recipe apparently comes from Korea, which on top of being delicious brings a lot of sweet memories for me… have fun making it !
200g fresh ginger
- Extra sugar
- Peel ginger using a tablespoon. This is an indian trick, check out this vidéo it’s in french but Apolina (the lady) shows how simple and economis this is.
- Slice ginger.
- In a small pan, boil 500ml water. Lower the heat from high to middle, add ginger, cover and leave it for 15 minutes.
- Do this 3 times – The idea is to remove the hot effect of the ginger
- Dry ginger.
In the same pan, boil honey, sugar and water (375 ml). Lower the heat, add ginger and leave it for 30 minutes until ginger becomes trasnparent.
Put the slices of ginger out of the water on a flat plate or tray using a fork or a pliers.
Here, you can dip ginger slices into icing sugar to avoid them to stick to each other or also dip them into normal sugar for a crusty effect. But none of these processes are mandatory.
Do not throw your cooking sirup, you could use it for making candies, add flavour to tea or yogurt…
