Recipe : Homemade white bread with seeds

This good old fresh bread just out of the oven for a slow sunday morning…

Making bread takes time… because you need to let your bread rise for one hour twice. But actually, the real preparation time is about 23 minutes : 5 minutes combining the ingredients, 15 minutes kneading, 3 minutes shaping. Then with a good alarm clock reminding you to go check your bread if you’re doing something else, it’s aboslutely not that time consuming if you’re pumped to try.

And if you’re still wondering why making bread is worth the time : Because it’s economical, empowering, it gives the opportunity to know the ingredients you use, to have fresh bread anytime you want, even at 3 o’clock in the morning (…), and kneading is extremely relaxing and very sensual (just so you know…).

Ingredients :

  • 750 g flour T65 (or more)
  • 12 g dried yeast
  • 12 g salt
  • 450 g water
  • 80 g seeds (sunflower, sesame, nuts, dried fruits…)

Preparation :

  • In a bowl, pour flour, add yeast in one corner and salt in another corner, stir.
  • Add seeds, stir.
  • Add water, stir until homogeneous.
  • Knead for 15 minutes (prefer stretching and folding to crushing).
  • After kneading put dough back in bowl, cover with wet dish towel and let rise until dough double in size.
  • Take air out of dough by pushing with fingers and fists.
  • Shape (give dough the shape you want) and leave on baking tray covered by baking sheet. Cover dough with wet dish towel.
  • Let rise. Set a timer for 40 minutes.
  • When timer rings, heat oven at 250 °C. Set timer for 20 minutes.
  • When timer rings, lower heat of oven (200°C) and bake dough for 30 minutes.

And here you go for some delicious toast…
