Lemons, sugar and patience !

Ingredients :

  • 1 kg lemons
  • 1 kg sugar
  • Sterilised mason jars

Preparation :

  • Choose peeling the lemons or not (peel = bitterness) and cut into regular bits.
  • Directly in the jar, combine lemon bits and sugar (in weight, as much lemon as sugar) and press.
  • Leave it in the dark for at least 3 months.
  • Use it in water (warm or cold), 5 volumes water for 1 volume hyoso.
