Varenik – A recipe from Kyrgyzstan

Version française

A russian tortellini stuffed with mashed potatoes. I discovered this recipe in Kyrgyzstan (In Arslanbob) but I heard that it’s a speciality of Ukraine or Russia… Well let’s say it comes from somewhere in the old USSR countries.

Varenik experience - DIY - Inspiration from Kyrgyzstan


240g flour
120 ml boiling water
1/2 teaspoon salt
1 kg potatoes
2 big onions
1 handful coriander
2 teaspoon cumin



  • Prepare the dough by following the instructions in the video here below until you rich the moment where she says something like “wrap the dough in plastic paper and let it rest in the fridge”

  • Prepare the mashed potatoes
    • Peel off the potatoes
    • Cut them into smaller pieces
    • Boil them for around 20 minutes (when you can mash them simply with your fork, it’s ready)
    • While it’s boiling:
      • Chop the onions and cook them in olive oil (pull half the quantity out as soon as the onions are trasnparent and fried the other half (until the color turns light brown))
      • Chop the coriander
    • Mash the potatoes together with the onions you removed first from the frying pan, coriander, cumin, salt, pepper
    • Take care of the dough:
    • Cut the dough into 3 pieces and keep the pieces you’re not using in the fridge so that it doesn’t dry out
    • Roll it out (it has to be very very very thin…) I use the machine, Yes I know I’m a cheater but when you’re studying cooking, it’s kind of a good investment ^^

Here you go !

    • Now you’re ready to cook your vareniks… Put them in boiling water a few seconds (It’s ready when they float at the surface of the water)
    • Before serving it, if you really want to do it the Kyrgyz way, fried them a few seconds together with the fried onions, salt and pepper
    • Varenik in Kyrgyzstan are served  with melon…
