Recipe : Endive salad with sunflower seeds and blue cheese

Belgian endives are early and it’s almost not cold enough for making gratin yet… almost !

Brambles are done giving blackberries and belgian endives are early… WHAT ?!?

Alright, next year I’ll start harveting wild brambles earlier to make my favorite jam and for now : it’s NEVER too early to start eating endives when you live in Belgium !

Ingredients (for 2 persons – Starter):

  • 2 belgian endives
  • 30 g blue cheese
  • 1 generous handful sunflower seeds
  • Vegetal oil
  • 1 schallot
  • 1 Tsp mustard
  • Salt
  • Black pepper

Preparation :

  • Clean endives.
  • Fry sunflower seeds in a tbsp vegetal oil until golden, season.
  • Cut blue cheese into small cubes.
  • Slice endives.
  • Make vinaigrette sauce : Chop schallot, combine with mustard, salt, black pepper and whisk, adding vegetal oil slowly.

Et… voilà, Bonne dégustation !
