October is finally here, colors are changing and… your basil is looking sad  !

Some basil plants are slowly growing flowers, their leaves are getting harder and wilted… the season is ending, it’s time to do something ! Cut the flowers, bring your plant home and make it last a little longer ? Or harvest and dry ? or harvest, chop and freeze ? Or harvest and make a pesto ? or harvest and use in olive oil ?  or let the flowers grow into seeds to make sure you have basil to plant next year ?!?

There are definitely many options with basil at the end of the season but for today, if you think about making a homemade pesto, I got you covered…

Ingredients : 

  • 35 g basil
  • 80 g pine nut
  • 60 g parmesan cheese
  • 80 g olive oil
  • 1 garlic clove
  • Salt

Preparation : 

  • With a blender:
    • Grind parmesan cheese if not done already.
    • In your blender bowl, combine olive oil, pine nut and garlic and blend at high speed.
    • Add basil and blend at medium speed.
    • Add ground parmesan cheese and blend at low speed.
    • Season and store in a jar.
  • With a pestle :
    • Smash garlic and pine nut.
    • Add basil and make a paste.
    • In a bowl combine the smashed ingredients together with parmesan cheese, stir and slowly add olive oil.
    • Season and store in a jar.
