Chackockbili – Beef stew with walnut sauce – Georgia

Chackockbili, my favorite meat recipe, a speciality from Racha


(I unfortunately don’t have the proportion for the recipe. Count around 200 g beef per person, 3 big onions, 7 garlic cloves and the spices represent around 3 tsp  after being mixed).

  • Poultry broth
  • onion
  • Parsley
  • Mashed garlic
  • Tomato purée
  • Walnut powder
  • Coriander powder
  • A bunch of fresh coriander
  • Blue fennugreek powder
  • Marigol powder
  • Cumin powder
  • Cinnamon powder
  • Chili powder (optionnal)
  • Sunflower oil
  • Salt


Boil the meat in an arranged poultry broth with 1 onion and chopped parsley. As soon as the meat get loose from the bones it’s ready.

In a frying pan with sunflower oil, sera the boiled meat together with onions, a table spoon of tomato purée, mix it and cover. After 10 minutes, add the spices, the walnuts, a bunch of fresh and chopped coriander and mashed garlic. Mix it, cover for another 10 minutes and stop the fire.

Serve with fried potatoes.
