Lobio Parki – An easy recipe that really tastes like Georgia
- 2 garlic cloves
- 1 onion
- boiled beans (2 fresh kinds (check here below))
- 3 tomatoes cut into pieces
- 1 bunch of parsley
- 1 bunch of coriander
- 200 g smocked lard
- Chili (optional)
In a pan, sear the lard in order to get a maximum of its grease. If it doesn’t sweat enough, just add a bit of sunflower oil. Add the onion, the tomatoes and a few leaves of parsley, coriander and cover.
When the texture looks like a sauce (liquid), add the beans and half of the herbs. Let it boil and cover.
Add garlic and the rest of the herbs. Let it boil a last time and stop the fire.
The 3 stages of beans
This 3 kinds of beans are from the same vegetable but at a different stage. At the first stage, the beans are in a green shell and are very soft and small. You cook them by boiling the shell with the beans in it.
At the second stage, the shell is yellow and a bit hard but the beans are soft and big enough to be boiled directly without their shell.
At the third stage, the beans are dry and you usually store them in a jar for winter.
