Mtabal – A kind of Houmous but with eggplants

Ingredients : FYI, it’s quiet impossible to give you the exact quantity of each ingredient as the recipe is made with the eyes

  • Eggplant
  • Tahini (Sesame paste)
  • Olive oil
  • Salt
  • Garlic (2 cloves – optional)
  • Lemon juice (optional)

Preparation :

  • Put the eggplant firectly on the flame to get a slight taste of burnt
  • As soon as the eggplant start to feel loose in your hand, take off the tail and the skin
  • Put the rest of the eggplant in a mixer and add the tahini slowly, the olive oil, a pinch of salt, a trickle of lemon juice and garlic
  • Mix it until you get a texture similar to guacamole
