The Brutus salad… Do you know caesar ? Same same but different !

Caesar salad_salade Cesar_chicken_parmiggiano_sauce

Ingredients (4 persons):

  • Lettuce
  • Cherry tomatoes
  • Dry bread
  • Bacon

For the chicken :

  • 400 g chicken breast
  • 2 eggs
  • Oil
  • salt
  • Floor (3 tbsp)
  • Breadcrumb (or powder from corn flakes or panko…)

For the sauce :

  • 1 egg yolk
  • 1 tsp french mustard
  • 35g parmigiano
  • 1 garlic clove
  • Juice of half a lemon
  • 12 cl of oil (with neutral taste)
  • 2 anchovis
  • Salt
  • Black pepper

Preparation :

  • Cut the lettuce leaves.
  • Fry the bacon and cut it into pieces.
  • Cut the bread into cubes and fry them in olive oil, add salt.

For the chicken :

  • 3 bowls, in the first one : 3 tbsp floor, in the second one : 2 eggs mixed with oil and salt, and in the third one : Breadcrumb.
  • Cut the chicken breast into thin strips.
  • And dip the strips of chicken into the 3 different bowls : Floor, eggs, breadcrumb.
  • Fry (Medium heat, oil, don’t cover)

For the sauce :

  • Mix together the egg yolk, 1 tsp mustard, salt and black pepper.
  • Add oil slowly as if you were making a mayonnaise.
  • Add grounded garlic, parmigiano and anchovis.
  • Add lemon juice up until you like the taste and consistancy of your sauce.
  • You can add some sour cream to soften the sauce and make it smoother.

(Warning : In the traditional recipe there isn’t any anchovi because they use Worcestershire sauce made with anchovi paste. If you plan on using Worcestershire sauce, don’t use anchovis !)
